I am back with Paneer Bhurji Rice recipe for the day. I hope all of you liked my previous recipe of Green Moong Tikkis which is absolutely protein rich and yummy. If you have missed it out, please do check it out here. Coming back to today’s Paneer Bhurji rice recipe, this is a super easy one pot rice recipe that can be done in a jiffy. If you are a paneer lover like me, this Paneer Bhurji rice recipe is a must try. This does not need any special accompaniment as such. I generally take this with ketchup and it tastes great. Paneer Bhurji is nothing but scrambled paneer mixed with spices and onions. It is almost similar to scrambled eggs and tastes equally good.
I love paneer so much that I can eat it just like that. Fortunately, my little one has inherited most of my food favourites and so it is a win win when I make anything I love and he ends up eating it too. Specially, if it is paneer it is a big YES. This paneer bhurji rice was no exception. I also clicked it in a lunch box that he was given in school and he was even more excited to have it from that box. Whatever it is, I am just glad that he eats paneer without any fuss.

Preparation Method of Paneer Bhurji Rice
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Paneer/Cottage Cheese: 200 gms scrambled
Onion: 1 medium sized chopped
Green Chillies: 1 or 2 (optional)
Coriander/Dhaniya Powder: 1 tsp
Cumin/Jeera Powder: 1/2 tsp
Turmeric Powder/Haldi: 1/4 tsp
Red Chilli Powder: 1/2 to 3/4 tsp depending on level of spiciness
Amchur/Raw mango Powder: according to taste
Cooked Rice: 2.5 cups
Salt: to taste
Coriander leaves: to garnish
Oil: 1 tbsp
Cumin Seeds/Jeera: 1 tsp
1. Cook rice and spread on a plate.
2. Heat oil in a pan. Once the oil is hot, temper some cumin seeds.
3. Once the jeera splutters, add the onions and chillies. Saute till the onions are done and slight brown in color.
4. Add all the spice powders and saute for a couple on minutes.
5. Next add paneer and mix well.
6. Finally add the cooked rice, salt and mix very carefully without breaking the rice.
7. Garnish with coriander leaves.
